The time finally seems right to start some early foraging. The wild garlic is now well out of the ground and we can replenish our stocks of dried wild garlic to last throughout the year. It is great to sprinkle into dishes as a quick alternative to garlic cloves and reminds us of spring even in the depth of winter. I am determined to try some wild garlic pesto this year as well. Garlic mustard or Jack by the hedge is also shooting up everywhere and livens up salads as well as some delicate new tree leaves such as hawthorn.
